what we've been eating, part two

Way back when (which was September 8, 2015) I shared our go to recipes.  I thought it was time for an update. While those are still favorites, we've added a few.

Blueberry Muffins.  GMac and I are big fans of these muffins.  Monkey is a fan on making them, but she can't like blueberries.  Can't like them either. Oh well, that just means more for us!

What C and Monkey can like are these Chocolate Chip Muffins.  Last week was Grandparents Day at preschool and I was signed up for muffins. I had planned on blueberry muffins, but my blueberries went bad and I didn't want to truck to the store with the kiddos for a pint of blueberries so I found this recipe and happened to have just shy of a cup and a half of mini chocolate chips. While I've only made these once, I have a feeling these will soon become a staple (C ate three in a matter of twelve hours).

Ravioli with Creamy Sun-Dried Tomato and Basil Sauce.  This dish is a bit heavy and I've only made it twice (because it is such a heavy dish), but man is it good. Like restaurant quality good and even better the next day.

Spaghetti with Turkey Meat Sauce. There is no recipe here. Just brown the ground turkey, add a can of tomato sauce and toss with the spaghetti.  We are trying to cut back on red meat and honestly, this tastes like regular old meat sauce.

Roasted Green Beans with Parmesan Cheese.  Again, no recipe to link to here.  It's so easy.  Toss fresh green beans in some olive oil, salt, and pepper, and roast in the oven until almost crispy. Top with freshly grated Parmesan (people, a wedge of Parmesan is pretty much the same as a tub) and viola!*

Viola is a new favorite word of mine as I recently learned how to spell it.
