What we've been eating

It's been a while since I posted a recipe.  Don't worry, we aren't starving. Especially GMac. He'd eat a tree if he had more teeth. Speaking of trees, we have a tree in our yard that is producing apples (hasn't done so before this year).  They seem to be bigger than crab apples.  Can we eat them?

Here's a quick linky list of what we're currently enjoying.

Skinny Loaded Nachos.  C's Mommy introduced us to this new recipe box staple. I was hesitant about this because of the ground turkey and my nachos tasting all poultry-y, but I love them. I love them lots.

Zucchini Parmesan Crisps.  I made these the other night and ate half of them before I even set them on the table.  They are that good. Don't quote me on this, because I'm not nutritionist (I have a healthy addiction to Hostess Cupcakes going on at the moment), but I think they are healthy.  Also, 1 cup of zucchini has 19 calories in it.  The more you know.

Slow Cooker Creole Chicken.  Try it.  You'll like it.  Serve over Carolina Plantation Rice for the win.

Chicken Taco Salad.  This is another Grandma Elsea contribution.  May the Neely's marriage rest in peace.  Totally did not see that separation coming.

Pork Chops with Carolina Rub. Holy moly. You must try this rub. Last Thursday night, while eating Caribbean Jerk marinated chicken, C proclaimed that this Carolina rub was the best thing I have ever made. I kid you not.

Baked Oatmeal Square with Cherries.  This is my go-to breakfast. I make a batch in muffin tins (yields 18-20 "muffins"), individual wrap them, and freeze them.  On my way out the door I throw two in my purse and by the time I get to work they are room temp and ready to eat. I double the almond extract and usually throw in more cherries because cherries are good.

Those are my current four favorites. I'm always open to suggestions.  Any ideas?
