Brown Rice, Black Bean, and Corn Cilantro Salad

This is my summer dish of choice.  Aunt Amy made it for Mark's graduation party and Father's Day so I was lucky enough to have it two weekends in a row. Now I want it every single day.  If that doesn't make you want to eat this, maybe this'll help... even Monkey likes this salad.  Beans. Rice. Corn. What more could a baby ask for?!

I'm not sure what exactly it's called or what exactly the recipe calls for as this is a hodgepodge of recipes I found (plus my addition of the feta). 

Brown Rice, Black Bean, and Corn Cilantro Salad


1 cup brown rice
2 ears of corn or 1 cup of frozen corn, thawed
1 can black beans, rinsed and drained (or is it drained and rinsed?)
1 clove garlic, minced
6 Tbs lime juice (roughly two large limes)
1/2 tsp. salt
1/4 tsp. pepper
2 Tbs. olive oil 
1/4 cup cilantro, chopped
Crumbled Feta cheese

Cook the rice according to package directions (in my case it was 1 cup of rice to 2 cups of water for 45 minutes).  After cooking, drain any water thats left (unless you're able to cook rice the correctly, unlike me).

Mix the olive oil, lime juice, garlic, salt and and pepper.  Toss the warm rice with the dressing and add the black beans. 

Let cool. 

Completely cool.

Add the corn, feta, and cilantro.  Chill until ready to serve.
