Rolo Cookies

Have you ever had Rolo cookies before?

C said he hadn't (but he had) and I'm pretty sure that a year from now, when we make them again, he'll say the same thing.

But right now, he remembers and he loves them.

Rolo Cookies


2 1/2 cups of flour
1 cup sugar
1 cup brown sugar
1 cup butter, softened
3/4 cup cocoa
2 eggs
1 tsp. baking soda
2 tsp. vanilla
Rolos (roughly 45 unwrapped)
1/4 cup sugar
coarse sea salt

Preheat oven to 350 degrees.

Mix together butter, sugars, eggs, and vanilla.

Add flour, cocoa, and baking soda. Mix until combined.

Scoop a tablespoon of dough and roll into a ball (we used a tablespoon cookie scoop). Fold over a Rolo and roll into a ball again.

Roll in sugar and sprinkle with coarse sea salt.

Bake for 8ish minutes.  Let sit on the baking sheet for a few minutes after removing from the oven (or the melted Rolos will make a mess).
