BBQ Chicken Quesadillas

Ladies and Gents, today we have our first guest post!!  Emily had some time on her hands the other day (thanks to her professors cancelling classes) so she whipped up these yummy BBQ Chicken Quesadillas and sent the pics and recipe my way to share with you.
 
BBQ Chicken Quesadillas
(Loosely adapted from Recipe Paiges)
 
 
1 cup cooked chicken, chopped/shredded
¾ cup frozen corn
1 cup black beans, rinsed
1 cup BBQ sauce
1 teaspoon chili powder
½ teaspoon cumin
Coriander (optional)
Salt and Pepper
Shredded Cheddar Jack or Cheddar cheese
Tortillas
In a small pan over medium-low heat, combine the chicken, corn, and black beans for a few minutes to start to warm everything up. Add the BBQ sauce, teaspoon of chili powder, ½ teaspoon of cumin, and a dash of coriander (if you have it- its not all that important), salt and pepper. Mix well. Continue to heat over medium-low heat for 3-4 minutes or until everything is heated through.
 
Heat a tortilla in a large skillet over medium heat. Sprinkle with cheese, then spoon 2 scoops of the BBQ chicken mixture onto the cheese and tortilla. Add more cheese on top of the chicken; fold the tortilla over, and smush down. Cook for a minute, then flip and cook for another minute or two. When done, remove from the heat and cut into thirds.
 
Makes 4-6 quesadillas. The measurements are totally made up be me and therefore arbitrary*, so don't read too much into them and just use as much of each ingredient as you want.
