Grandma's Mashed Potatoes

It's been almost two months since I posted a recipe. I'm sure you're all worried about whether or not C is even fed any more. Trust me, he is. I've been cooking, but all of the meals are meals I've already shared with you. Every.Single.One.  Well, that or they are frozen meals you throw in the oven for an hour and half.

Last Saturday we had a nice dinner at my parents' house. I offered to make a potato dish and saw this as a prime opportunity to make something I haven't shared with you yet.  So I give you...

Grandma Ted's Mashed Potatoes*


12 medium potatoes
8 oz. cream cheese
8 oz. sour cream
1 stick of butter (at the most)
Garlic powder to taste
S&P to taste
Paprika or Parmesan cheese for the top

Boil the peeled and chopped potatoes in salt water (this is all of the salt I used).  Once cooked through, strain and mash. 

Once thoroughly mashed, add cream cheese, sour cream, and butter (I only used about half of a stick). Combine with an electric mixer.  Also add your garlic powder and pepper (and salt if necessary).

Transfer to a greased baking dish and sprinkle with paprika or Parmesan cheese (I went with the paprika).

Bake for 45 minutes to 1 hour at 350 degrees, uncovered.

I'm told these are best if made a day or two before and refrigerated before baking.  You can also make these in advance and freeze them for when you're hungry. Or if there are just two or three of you in your family, divide into multiple dishes and freeze.


*These are a staple at any Stephenson family get together.  Apparently they weren't Grandma Marlene's recipe, but Great Grandma Clara's, affectionately called Grandma Ted.
