Casa Salad

Two salad posts in less than a week? What is wrong with me? I appear to have gone healthy.

In Ft. Wayne, Indiana you can get a delicious salad at Casa Ristoranti Italiano. If your not near Ft. Wayne, then you can make the salad yourself.

Casa Salad 

What you need:
24 oz. romaine lettuce
1 red pepper
green onions
garlic croutons
1/2 cup parmesan cheese, shredded
1/2 cup mozzarella cheese, shredded
1/2 cup red wine vinegar (or whatever you have, I used apple cider)
1 cup veggie oil or olive oil
1/2 tsp. oregano
3/4 tsp salt
3/4 tsp pepper
1 garlic clove, minced
1 tbs sugar
2 tbs cornstarch

First make the dressing.  In a blender combine 1/4 cup of parmesan cheese, vinegar, oregano, salt, pepper, garlic, sugar, and cornstarch. While blending, pour in oil.  Chill the dressing while you make the salad.

Combine all other ingredients: lettuce, red pepper (for color - we don't like red peppers), remaining cheese, green onions, and croutons.  Right before serving toss with the dressing.

C really liked this salad.  And he doesn't like non-creamy (I guess that would be oil based) dressings. Go Casa!

When googling the website I discovered there are also Casa restaurants in Florida.  I would imagine their salads are also the same. But then again, maybe not.
