Sloppy Joe's

Here's a recipe I've been meaning to share with you for a while.  I made these a few weeks ago when we were trying to use up food we had on hand.  There aren't really exact measurements, just globs and blobs (I'm just guessing in the instructions below). What I like about these are 1) there are no peppers and 2) they are sweet tasting.

Sloppy Joe's


1 lb. ground beef
1 medium onion, chopped
1/2-3/4 cup oats
1/2-3/4 cup ketchup
2 Tbs. mustard
2 Tbs. brown sugar
1 cup of water
splash of vinegar
S&P to taste

Brown the beef and the onions, drain.

Return to the skillet and add the rest of all of the ingredients.  Combine and simmer over low heat for 15-ish minutes until thickened and warmed through. 

Since I don't have exact measurements here are some tips.
1) If the color isn't appetizing, add more ketchup.
2) If it isn't sweet enough, add more brown sugar.
3) If it's too runny, add more oats.
4) If it's too thick, add more water.
5) If your grocery has tomato and rice soup, substitute this for the ketchup and just add a squirt of ketchup.
6). If it's too sweet, add some more mustard or vinegar.

Seriously, though, the measurements above should work.  Last time I added a bit too much brown sugar and just added another squirt of mustard. That was the only adjustment needed.

Also, C isn't a fan of sloppy joe's (or mustard) but loves these (at least that's what he tells me).
