Mandarin Orange Salad

I'm not gonna lie, I'm a bit nervous about tomorrow's game. The tension has been rising each day this week.  I can only imagine what it will be like tomorrow.  I'm sure I won't be able to focus, but nothing compares to the Indians play off run in 2007. That was a mental rollercoaster like nothing I have ever experienced.

I also seem to have lost my Victoria's Secret Free Panty Coupon which is currently taking my mind off the game because who can stand the thought of not getting a free pair of underwear valued at at least $7.50? I have until March 31st to find it.

With that being said, if you too are worried about either of the two things mentioned above, I suggest you make this yummy salad to help take your mind off my problems.

We made this for Amber's bridal shower a few weeks ago.  The dressing is super easy and only requires what you should already have in your pantry.

Mandarin Orange Salad



What you'll need
3-4 cups of salad greens (we used romaine and iceberg)
1/4 cup thinly sliced onions
1 can mandarin oranges (drained)
1/4 cup slivered almonds
1/4 cup vegetable oil
2 tbs. vinegar
2 tbs sugar
1/2 tsp salt
1/4 tsp pepper

Make the dressing with the oil, vinegar, sugar, salt, and pepper.  Chill for at least 2 hours before serving the salad (use the freezer if in a pinch).

In a large bowl combine lettuce, almonds, onions, and oranges.

Toss dressing and salad and serve!


I threw some extra strawberries in and I'm pretty sure they made the salad even better.  Fruit in salad is never a bad thing.
