Mama E's Chocolate Pumpkin Loaf

This weekend I made Mama E's Chocolate Pumpkin Loaf in the pan she gave me for Christmas last year.  It sorta looked like this, only much cuter.

I figured I should share this ASAP so you can make it every weekend until Thanksgiving is over.

Mama E's Chocolate Pumpkin Loaf

What you'll need
3 1/2 c. sugar
1 1/4 c. veggie oil
3 eggs
1 can (29 oz.) solid-pack pumpkin
3 square (1 oz. each) unsweetened chocolate, melted and cooled
1 1/2 tsp. vanilla
3 3/4 c. flour
1 1/2 tsp. salt
1 1/2 tsp. baking powder
1 1/4 tsp. baking soda
1 1/4 tsp. ground cinnamon
1 - 1 1/4 tsp. ground cloves
1/2 tsp. ground cloves
2 c. (12 oz.) semisweet chocolate chips


Preheat oven to 350 degrees.

In a large (very large) bowl, combine sugar, oil, and eggs.  Mix well.

Stir in the pumpkin, chocolate and vanilla.  Mix well.

Combine all dry ingredients and stir into pumpkin mixture just until blended.  Stir in chocolate chips.

Transfer to three greased 9x5x3 inch loaf pans.  Bake for 55-65 (mine went roughly 75) minutes or until a toothpick inserted near the center comes out clean.

Cool for ten minutes before removing from pans to wire racks.  Wrap and freeze for up to six months if desired.
