Green Beans with Lemon and Garlic

The only two things that need said about this dish is 1) there are only 50 calories per serving and 2) despite the lack of calories these green beans are delish.

This would also be a great, easy go to Thanksgiving dish.  Not that I would really know, I've never made an entire Thanksgiving meal.

Green Beans with Garlic and Lemon

What you need
1 lb fresh green beans, trimmed and cleaned
1 Tbs. extra virgin olive oil (I actually used regular olive oil)
3 garlic cloves, minced
2 tsp. lemon zest

1 Tbs. lemon juice

Bring salted water to boil in a medium sauce pan.  Add green beans and return to boiling.  Cook roughly two minutes or until beans are crisp yet tender. (Sounds tricky, huh?)

Drain and run under cold water to stop the cooking process. Pat dry. (Up to this point you can do everything well in advance of eating).

Heat EVOO in a large skillet and add garlic.  Cook roughly 1 minute until soft.  

Add green beans and lemon zest and cook a few more minutes (2-3ish) until warmed through. Stir in lemon juice.

Add S&P to taste (I totally did not do this and no one noticed).
