Easy Peasy Chicken Tacos

I made the easiest dinner a few weeks ago. It's so easy we're having it again this weekend.  Easier than boxed mac and cheese (yum - my favorite) but not quite as easy as raman noodles.  It is seriously sooo delicious.  I kept saying to C, "This is so good, I can't believe I made it."  I believe he was thinking the same thing. Thanks go out to Lora for introducing me to this dish during her bachelorette part.  While some may have taken away great drunken memories, I took away yummy recipes.

Easy Peasy Chicken Tacos*

Here's what you'll need:
1 lb. boneless, skinless chicken breasts
1 packet of taco seasoning (make sure it says it can be used with chicken)
1 can diced tomatoes with chilies
a crock pot

Here's what you'll do:
Combine all three ingredients in the crockpot.  Cook on low for 4-6 hours.

Once the chicken is super duper tender remove it from the crockpot and shred it with a fork.  Then place it back in the crockpot will all the tomato/taco seasoning/chilie goodness for a few minutes.

Serve on the taco of your choice with the garnishes of your choice.
