German Chocolate Cupcakes. Aka "An Ode to Big Red."

It appears that the cake, or in this case, cupcake of choice among men is German Chocolate. 

For father's day I made German Chocolate cupcakes for my dad and father-in-law (FIL?).  I had every intention of making it from scratch, but in the end it looked too time consuming for a summer day (maybe not a winter day).  Instead I made the good old box mix with a couple of substitutions. 

Oh, and before I begin, here's your history lesson for the day, from C, who thought it was neccesary to look up the history of this recipe while I was making the cupcakes.  Turns out there is no German (as in the country) connection, but instead the recipe comes from an English gentleman by the name of Samuel German.  Oringially the recipe was called German's Chocolate Cake until the 's was dropped. Class dismissed.

German Chocolate Cupcakes






Here's what you need:
1 box German Chocolate cake mix
1 container of Coconut Pecan Icing*
1 cup sour cream
1/2 cup vegetable oil
3 large eggs

Here's what you do:
Preheat your oven to 350 degrees (still looking for that neat-o degree symbol).

Mix cake mix, sour cream, eggs, and oil in a large bowl until well combined. 

Pour into cupcake liners and bake for 16-ish minutes.

Rmove from the oven, let cool (but not as long as I did - 2 days - they'll get a little dry - but hey, I was busy), and ice.

Let your father or other man in your life enjoy.


I should note that C does not like German Chocolate cake.  I think he'd like the cake without the icing as he is not a nuts and coconut guy. 


*Side story: My best friend, Big Red, aka Kristen, is from Kentucky and arrived in Ohio with the sweetest southern accent.  She said pitcher instead of picturenecked instead of naked, and kohler instead of color. So darn cute.  Anyway, one day, while riding to a basketball game with Big Red and her family we were discussing other words which are pronounced differently in different regions of the country.  We went through creek and ruff and then this happened...

Karen (Big Red's mom): "Rachel, how do you pronounce p-e-c-a-n-s."

Me: "Peckins."
